Watching Jamie Oliver's new cooking program the other night which is about creating simple but tasty dishes using only 5 main ingredients and liked the look of his Quick Asian fishcakes. So rattled some up tonight on a bed of vegetables and rice for the family. Clean plates and Alfie was very quickly out in the kitchen laying claim to the one extra I cooked.
And as we are still getting plenty of blackberries from the hedgerows a Blackberry and apple cake for dessert. I tweaked the recipe for this though with rather than using whole uncooked blackberries. I cooked the blackberries in a splash of orange juice, a couple tablespoons of honey and a sprinkle of cinnamon. I then sieved them and then peeled and sliced two apples and soaked them in the blackberry juice that was in a saucepan and then just heated and thickened the juice a bit with cornflour, not cooking the apples to much.
I then made the cake mixture Blackberry & apple cake recipe and rather than mix the apple soaked in blackberry juice in the cake mixture I layered the tin with cake mixture and then soaked apple slices. I served the cake slightly warm with a dribble of double cream and some of the lovely thickened blackberry juice left over from soaking the apples.
