Bubble and squeak, with two runny fried eggs, and tomato chutney. The eggs were laid by our chicken this morning. A little bit of heaven. In my world always made from the left over veg (best with cabbage) and roast potatoes from a roast dinner. Sometimes I might boil up a few extra potatoes to stretch it out, if not to many roast potatoes left over. I also bung in any leftover stuffing. Gives a bit more flavour, especially if the stuffing was cooked in the juices of the roasted meat.
